I like to eat color

Husband made a trip to Costco for me and came home with tons of basil and tomatoes.


I just love the color it adds to meals.







I made my favorite egg scramble with fresh tomato, basil, cilantro and goat cheese and put it in a whole wheat tortilla.




Caprese salad was for dinner and I devoured it. I may have that again for lunch.

I have so much basil , seriously that I just can't let it go to waste.
These are some recipes I plan to whip up this week.

Healthy Eats : Radishes

Radishes are a wealth of health. Loaded with vitamin C, especially there greens.



This little guys are part of the cruciferous family and contain cancer protective properties as well as detoxifying properties to remove toxins, viruses and parasites. Also adding these to your diet will help your digestion and help to maintain a healthy gallbladder and liver.








Last nite I made a yummy fresh radish salad. It's super easy and you can whip it up in minutes.



1 bunch of radishes, sliced



cilantro, chopped (optional)



lemon juice



salt and pepper













I paired it with a grilled chicken kabob.






This meal speaks summer to me.

Inspirational Thoughts Thursday and a refreshing salad

I made this refreshing salad the other day with ingredients that pretty much everyone has in their fridge right now. It's summer and hot here in San Diego and this hits the spot if you want to refresh your palate.
Watermelon, Jicama and Cucumber salad
Ingredients:
Watermelon, Jicama, Cucumber
fresh mint and cilantro
salt and lime juice
chop up everything and add the seasonings to your liking.

Healthy Eats: Asian Noodle Salad

Thanks to Cookus Interruptuss this is one of my husbands favorite meals.
I just love when I make a dish that is not only healthy but delish. This easy meal was made with Soba noodles. These are japanese noodles made out of buckwheat or wheat flour. This would be a great choice for a gluten free diet. You would prepare them like spaghetti noodles and you can use them in various hot or cold dishes. And of course lot of veggies were added to this dish as well. Hope you try this recipe it really is worth it.

Healthy Eats: Emerald City Salad

I recently discovered this wonderful site thru another blog and I am so happy that I found it. So far I have made several dishes and they have all come out super delish. This is one of my faves.
This healthy green dish consists of swiss chard, brown rice, red cabbage, parsley, onion, bell pepper and fennel. YUMMY
Lately I have been in a funk, depressed and just not inspired. I love to cook and eat but even that bores me. Eating bores me?? I wanted fresh whole foods that made me feel light, energized and not bloated. This is where Cookus Interruptus saves the day for me. You really need to check out the site. Every recipe is videotaped with funny family interruptions, hence the name Cookus Interruptus. You can see it first before you decide to try making it. All of the dishes are super easy and very tasty. I find the site very entertaining as well. If you want to try some whole organic recipes this is a must see.
