The Easiest and Yummiest Chicken Tortilla Soup


This is the tastiest soup that I have been making for a few years now. The reason why it's so easy? Rottiserie chicken. You will have most of the ingredients at home all you need to do is pick up the rottiserie chicken.


Chicken Tortilla Soup


Ingredients:

olive oil

1 large chopped onion

3 carrots and celery stalks chopped

2 zucchini and 1 yellow squash chopped

1 can (small) corn

1 can (28 0z) chopped tomatoes with green chiles

1 whole rotisserie chicken

10-12 cups low sodium chicken broth

8 cloves minced garlic ( I buy the jar)

kosher salt

1 tsp cumin

1/2 tsp red chile flakes

juice of 2 limes


Instructions:


Heat 1-2 tbsp olive oil in a large pot over med. heat.

Add onion, carrots, squashes and celery- cook 5-7 minutes or till onions are transparent

Add garlic, 1 tbsp salt, 1 tsp cumin and 1/2 tsp chile flakes-cook 2 minutes

Drain tomatoes, add half and save half

Add broth and juice of 1 lime

Bring to a boil then simmer for 30 minutes

Meanwhile...

chop chicken into pieces-put into small bowl and toss with juice of 1 lime, 1 tsp salt, sprinkle small amount of cumin and chile flakes-let sit

Puree the other half of the drained tomatoes

Add the corn , chicken and tomato puree after done simmering.


Garnish with tortilla chips and fresh avocado

i have a million recipes for this but can't find the 'perfect' one...can't wait to try this. i love the rot. chicken..i buy 2 from walmart and come home and shred it for the weeks meals! yum
