Breakfast Cookies


I have just discovered a wonderful recipe from Clean Eating Cookbook. I have had this book for three years and every recipe is easy and delish.
This is one of my faves. Fruit and Nut Breakfast Cookies. This is a nice alternative to muffins. The girls loved them and I love the fact that I was able to make these while the girls were wild and crazy this morning.
Recipe:
1/2 cup brown sugar
1/4 cup light oil
3 egg whites
1/4 cup dried cranberries
1/4 finely chopped dried figs
1 tsp vanilla extract
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup bran flakes ( fyi I didn't have this)
2 tbsp ground flax seed
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/4 cup slivered almonds (fyi I used chopped)
Preperation:
1 Preheat oven to 350 F
2 Combine sugar, oil, egg whites in a bowl and stir in dried fruits and vanilla
3 Lightly spoon all-purpose flour into measuring cup and level with knife. Combine whole wheat flour, bran, baking soda, flax seed and spices. Stir with fork.
4 Add flour mixture to egg mixture and combine. Fold in almonds.
5 Drop by tablespoon full onto baking sheets lined with parchement paper. Bake for 12 minutes or until almost set. Cool on pans and transfer to wire racks.
Enjoy with a warm cup of coffee or tea.
